Blueberry Muffins

I baked something. And this time it worked! I was afraid I was never going to be able to bake something successfully... I was wrong! Yay!

This recipe of Very Simple Blueberry Muffins caught my eye because... I think you know me already well enough to know that "very simple" is my thing. I don't cook anything that couldn't be called "very simple". And very simple it was!

I modified the recipe, so here we have: Very very simple and healthy Blueberry Muffins!


1/2 cup ww spelt flour
1/2 cup ww flour
1/2 cup all purpose flour
1/4 cup cooked quinoa
1/2 cup unrefined sugar
2 tsp baking powder
1 tsp salt
almost 1 cup oats milk (or any other non-dairy milk)
1 Tbsp margarine (I wanted to use apple sauce, but it was bad already)
1 cup frozen blueberries

Mix all dry ingredients. Add oats milk and margarine. Fold blueberries in the mix. Pour mixture in muffin tins. Bake for 30 minutes at 200C. Enjoy.

They're tasty and I'm happy :-). And it's already weekend!

Congrats on your successful baking adventure. Easy baked good are my favorite. I'm not the best in the baked goods department. I need simple, easy to follow instructions.

These look so good. I love the addition of the quinoa. I bet they'll make a great breakfast with a hot cup of coffee on a nice weekend morning.

mhh blueberry muffins are delicious! and yours look great! everytime i use frozen blueberries they always turn the batter into a somewhat black-blue mixture =p

How funny that you made these because of the "very simple" in the title. Baking does get easier. And sometimes I still get random things that go wrong and I don't know why. Happens to everyone!
It's been way too long since I've had a blueberry muffin.... those look awesome!
