My New Favorite Sandwich


Yesterday I came up with my new favorite sandwich. Seriously. It's not pretty though, and I took the pictures with very bad light.

I wasn't even going to have dinner. My boyfriend bought this small pickled cucumbers jar for his dinner, and I was all disgusted. All "I don't like cucumbers!". And then "OK, I'll smell one". "OK, I'll try one". "Can you cut ten of them in halves for my sandwich?".

And suddenly, what I had in my hands was the best sandwich ever.



All you need is:
- bread
- vegan shiitake spread
- shiitake pickles (Russian way, so no vinegar)
- small cucumber pickles (well, cornichons, I hope you know what I mean)

It was so good that I had to make myself a second one after 10 seconds. So good that I had to make it again today for breakfast!

I'm officially in love with pickles.

What a creative sandwich! I have a problem with the pickled cucumbers, I like how they taste but can't stand the texture. So I grab my big knife and go to town on them on a chopping board until they are like a puree! I'm weird, I'm aware :)

This is a totally random question, but are you Russian? cornichon is pickle in French, but it's also pickle in Russian (one my my very best pals is Ruskie).
Either way, I love pickle sandwiches, and would love one of yours!! :)

Funny, cornichon is for us a dialect word. Put I do love them, especially the very small ones. Never heard of chiitake picles?

But but but... I can't make it because I've never seen vegan shitaake spread! Is it something you can make, or do you buy it in a jar?

Yum, I love pickles. Pickled shiitakes sounds so good, but I've never seen them here! :(

Where does one find vegan shitake spread? Did you make it? Shitake pickles?

in the US those little pickles ('pickle', on it's own, usually refers to a cucumber pickle... anything else is specified, like 'pickled beets' or 'pickled cabbage', etc) are called Gerkin pickles. Not sure why, but I do so love them!!

I LOVE pickle sandwiches! but I've never seen pickled shiitake mushrooms, it sounds delicious.

Pickles are awesome!!!! My favorite sandwich ever is dill pickle slices + vegan mayo + black pepper... that's it! YUMMMMY. In the summer, its tomato, mayo, and pepper for me!

Pickled mushrooms sound delicious! I'll have to find some. :)
