I didn't mean to abandon you for such a long time bloggies! But I had a flu, and then my boyfriend had a flu, and then I just had another terrible January. January and I aren't good friends, let's put it this way. It probably has something to do with how the weather has been awful.

While I was at my grandparents over Christmas, my grandmother made some great veggie meals, and I loved how she roasted some mushrooms filled with parsley and minced garlic. It tasted just awesome! I've tried to recreate it, but meh, it needs some work (and some fresh parsley!)

On the side I had roasted carrots and parsnips. I tried parsnips for the first time and they taste great! Sweet and nice!

Another thing I've tried to recreate are the marinated cold chickpeas my dad's girlfriend made for us last November when we went to Barcelona. They are marinated with curry spices and served cold!

Again it needs some work (well, what it needs is that I have a look at the recipe she sent me next time).

I made a nice lasagna, also filled with carrots and parsnip (and mushrooms, did you notice I'm saving in groceries?).

It turned out OK, and I discovered that making bechamel sauce relaxes me in ways I couldn't have imagined... Weird stuff!

I tried red quinoa for the first time (it was new in the supermarket!) and I'm SO HAPPY. It tastes great and I love it. I like it a lot better than regular quinoa.

My fridge is completely empty right now! And my pantry doesn't really look better... I have a lot of seaweed though! I guess it's time to go grocery shopping...

I love the simplicity of your meals but all the veggie flavor. It all sounds so good.

Ew, sorry about the flu! I hope you are 100% better! January sucks for me too.

Nice to have you back Alice! January isn't my favorite month either, but it's been easier this year with the escape to Barcelona. I thought red quinoa tastes the same, and haven't bought it since it's more expensive, but now I'll have to try it!

Sorry to hear you were both unwell.
I'm not a fan of parnsips, they try to masquerade as roast potatoes, and I've fallen for it too many times! (the cut-up bulbous end that is, the pointy bit is obvious!).
I'm glad you're feeling better >:o)

At least it's almost February! Hope you are both feeling better now.

I've never seen red quinoa around here, but I would to stumble on some. It sounds great!

Parsnips are awesome, aren't they? And so are stuffed mushrooms. It's always hard to beat grandma's recipes.

I shall name thee, Miss Bechamel sauce;)

We're just alike. I save on groceries by using the same vegs in various ways. From stir-frys to stews, to thickening soups. hehe.

Wow your lasagne looks amazing and everything else looks good...naturally!Yay, red quinoa. What does it taste like?Never had red, just regular.

Thanks for your smiles;)

Jan is ending soon...we're heading fast into the month of loooove! tee hee

Sorry to hear about all the illness and the crappy month that we call January. I am with you, I don't like January, it pisses me off, it always sucks. :-)

I have never tried parsnips but have always been interested. Last year, I went to the store intending to buy parsnips but since I didn't know what they looked like, I ended up with a rutabega. (Not very smart sometimes.)

Your food looks yummy, and I bet with a little time, you will get them down to your liking!

Im glad you are feeling better! Thank you for the warm 2009 wishes. So far my classes are great, couldn't ask for better (well cept physics ;) )

I've never thought about having parsnip in a lasagna, it probably was really good.

I always have themed meals. For a week or so I will have the same veggie, just since I dont want it going back if it sits with only half left. And I concur, grocery shopping is on my list of things to do!
